Off the top of my head for something completely fake, I might apply an
upward force that dissipates over time, distance or perhaps based off
initial throwing force/velocity. The upward force maybe representing some
aspect of lift of the frisbee due to shape, speed, rotation etc and the
amount of initial upward force would be whatever is required to counter
gravity. The amount of dissipation of this upward force over time would then
(I assume) control how 'floaty' it would be.

It’s the later part of the flight that need to be “floaty”. An ellipse would
dive down at the end.
BTW, this just to be a side view, and I’m not worried about whether the
frisbee should veer left or right. Also the disc will remain horizontal, it’s
just the height off the ground I want to be right.
